Processing
Low yield per hectare (80q.li/ha) of selected and slightly “over-ripened” grapes. Soft pressing of the whole grapes. Cold cleaning of the must. Low temperature fermentation. Aging on lees in cement tanks.
Colour
Intense straw yellow with greenish reflections.
Scent
Intense and persistent; scents of ripe fruit such as peaches and various tropical fruits that blend in with citrus fruits, producing a pleasant combination
Taste
Great soft, warm and elegant character; its fruity flavours are intense and persistent resulting in a persuasive, savory and full-bodied wine
Consumption
If safely stored, it can be consumed within 3 to 4 years from harvest

This wine can be paired with elaborate fish dishes or white meat recipes

Extra virgin olive oil “Politi Winery”
The last harvest gave us great satisfaction. Despite the dry summer season in the Arcevia area where our olive groves are, we fortunately had some extra rainfall at the end of July.
The yield was low but as commonly said “the less the quantity the better the quality”!
As a matter of fact, the oil obtained is particularly rich in scent and definitely interesting. We have produced two kinds of oil:

Olfactory analysis (varietal composition of extra virgin olive oils):
Medium green light fruity with scents of almonds and artichoke
Gustatory analysis:
The olfactory analysis is confirmed. In addition, there is a pleasant smoothness and a balanced harmony between the bitter and spicy taste blended in with the sweet background
Pairings (varietal composition of extra virgin olive oils):
Excellent on salads and bruschetta; on fish and white meats. It is also ideal for fried dishes thanks to its rich content of antioxidant substances.
